I have eaten 2 wedding cakes at hotels down in Vegas, and they both had a “waxing” coating for the frosting.

    It is a type of FONDANT. Real Fondant is made out of white chocolate. But the fake stuff is extremely waxy. it makes the cake look real nice but most of it just doesn’t taste good.

    Well here in Cali there the cakes are just made of regular cake mix– and the frosting or top of the cake is usually made up of sweet frosting or whipped cream.

    It supposed to be sugar frosting but it could be butter cream!!

    Your wedding cake shouldn’t be all looks — it must taste great too! The days of dry white cake with as much flavor as a piece of cardboard are long gone. From hazelnut and lemon zest to cannoli and red velvet, there’s a flavor to please just about every couple’s taste buds. Consider even the more complex flavorings such as coconut/key lime, blood orange/mango, and chocolate/hazelnut/mocha. Your selection of flavors may be based on the season — with heavier combinations (like chocolate cake with mocha praline filling) perfect for winter weddings, and lighter sponge cakes with fruits, curds, and preserve fillings more ideal for a summer affair. Can’t decide? Go for both! Be aware though that the expensive ingredients involved in making these couture concoctions may considerably up your price per slice — as will alternating layers of flavors.
    Outside the Box
    What will cover, or color, your cake? Butter-cream, fondant, marzipan, or ganache? Though similar in mixture, there are major taste and style differences between the icings. Know that the timing of your wedding may affect which type of frosting to use — buttercream won’t hold up well at an outdoor wedding on the hottest day of the year. Talk to your baker about recommendations.
